Dining In: Soup’s On!

This Thai classic is a meal in a bowl.

Thai chicken coconut soup, called tom kha gai, is a savory blend of some of the country’s most widely used ingredients, such as lemongrass, ginger and coconut milk. Milder soups like this one are often served as a side dish to balance out the spicier flavors found in many other Thai dishes. But tom kha gai also makes a delicious and satisfying main course all on its own—and can be simple to make.

Thai Chicken Coconut Soup

1 lb boneless and skinless chicken thighs, cut into 1-inch chunks

1 can (14 oz) coconut milk

2 cups (about 14 oz) low-sodium chicken broth

4 slices peeled ginger

1 stalk lemongrass, cut into sections

5 kaffir lime leaves (optional)

1 cup sliced mushrooms

½ cup fresh cilantro

2 tbsp fresh lime juice

1 tbsp Asian fish sauce

1 tbsp Thai chili paste

Pinch brown sugar

In a saucepan combine coconut milk and chicken broth. Add ginger, lemongrass and lime leaves. Bring mixture to a simmer over medium heat. Add remaining ingredients, but withhold some cilantro for garnish. Reduce heat and simmer 7 to 10 minutes. Discard lemongrass. Ladle soup into bowls and garnish each serving with remaining cilantro leaves.

Serves 4.
